Seems like our nice weather is deserting us so hear a couple more comfort food recipes for you.

Chicken and Dumplings

Boil your chicken with a couple of chicken broth cubes. You can use chicken parts or the whole chicken. When it is cooked make your dumpling as follows.

Enjoy! You can also use this for stew and dumplings as well.

Dumplings

3 tbsp. shortening

2 tbsp. B. powder

1 1/2 tbsp. sugar

3 1/2 C. flour

1 tbsp. salt

2 cups milk

Parsley

Mix and drop into boiling liquid. Cover tightly and boil for 14 mins.

Finish off your meal with this desert and a little cream.

Very Berry Cherry Cobbler

1 can cherry pie filling

1 pkg. frozen blueberries, thawed

1 pkg. Ffrozen raspberries,thawed

2 tbsp. corn starch

2 tbsp. sugar

2 c. flour

1/4 c. sugar

1 tbsp. baking powder

3/4 tsp. salt

1/2 c. cold butter

1 c. Milk

In a ungreased baking dish (9x13 inches), combine cherry pie filling, berries cornstarch and 2 tbsp. sugar and set aside. Combine flour butter, sugar, baking powder and salt until crumbly.Add milk and combine. Drop spoonfuls of batter onto fruit mixture. Bake at 375 F. for 35 - 40 minutes or until browned and bubbly. Makes six to eight servings.
