Tomato Herb Bread

This is a quick bread and excellent to have with a bowl of soup. This has wonderful flavour and color. And best of all super simple.


All-purpose flour: 3 cups

Baking Powder: 4 tsp.

Granulated sugar: 1 Tbsp

Oregano: 1/2 tsp

Basil: 1/2 tsp

Salt: 1/2 tsp

Tomato or V8 juice: 1 1/2 cups

Butter melted: 1/4 cup


Combine first six ingredients in a large bowl. Stir. Make a well in centre of ball.

Poor tomato juice and melted butter into well. Stir just to Moisten. Turn into a greased 9 x 5 x 3” loaf pan that’s greased. Bake in 400°F oven for 35 to 40 minutes. If loaf seems to be browning too much Leah piece of foil over the top. And inserted wooden pick should come out clean.Turn out onto rack to cool makes one loaf.

Italian seasoning can be used instead of the oregano and basil.
