Corn Fritters

Corn Fritters

Because it is the holidays I thought I would share this again!

This is a friend and family favorite. I would make these up once or twice during any camping trip we went on although I usually had to double or triple the recipe. Although the recipe says canned corn we would sometimes cut the corn off cooked corn to use it up. Dave this recipe is for you…

Ingredients:

11/3 cup flour

2 Tbsp. Sugar

2 tsp. baking powder

1/4 tsp. Salt

1 egg

3/4 cup milk

1 can corn

Instructions:

Mix all ingredients together. Drops by spoonfuls into hot oil and cook until browned and cooked right through. They cook faster if you make them smaller. Chopped apple can be used instead of corn to make tasty apple fritters. Dust apple fritters with sugar before serving. Both are quick and easy and disappear quickly.
