This is an old recipe but the one we enjoyed the most. Hope you enjoy this as much as we did.
Ingredients:
1 1/3 cup flour
2 tsp. Baking powder
1/2 tsp. Salt
1 tsp. Grated lemon rind
1 cup sugar
6 Tbsp. Shortening or margarine
2 eggs
1/2 cup milk
1/4 cup sugar
2 Tbsp. Lemon juice
Instructions:
Spoon or pour flour into a dry measuring cup. Level off and pour into a bowl. Add baking powder, salt and lemon rind; stairwell to blend. Cream 1 cup sugar shortening or margarine and eggs thoroughly. Add dry ingredients alternately with milk to creamed mixture. Blend well after each addition.
Turn into greased parchment paper lined 9 x 3 loaf pan. Bake at 350°F for about one hour or until toothpick inserted in centre comes out clean. Leave in pan.
Mix a quarter cup of sugar and lemon juice in a small sauce pan. Heat until sugar is dissolved. Drip this mixture over the loaf slowly, Letting small amounts sink into loaf before adding more. Surface of loaf maybe pierced with a toothpick to allow syrup to sink further into loaf. Let’s stand in pan a few minutes before removing two rack to cool.
