Boiled Raisin Cake

Wonderful moist cake with nice spices flavour.


1 1/2 Cups. Raisins

2 Cups. Water

1 3/4 cups. All purpose flour

1 1/2 tsp. Baking powder

1/2 tsp. Baking soda

3/4 tsp. Cinnamon

1/2 tsp. Nutmeg

1/2 tsp. Salt

1/2 cup. Margarine or butter

1 cup. Brown sugar

1 Egg, fork beaten

1 tsp vanilla


Combine raisins and water in small sauce pan. Boil gently for about six minutes. Drain and reserve 2/3 of a cup of the juice.

Stir next six ingredients in medium bowl. Cream margarine, brown sugar, egg and vanilla together well in large bowls.

Add flour mixture in three parts and reserved juice in two parts beginning and ending with flour mixture, stirring just to blend. Turn into greased 9 x 9“ pan. Bake in 350 F Oven for about 40 minutes or until wooden pick inserted in centre comes out clean. Ice with caramel icing recipe:



1/2 cup. Brown sugar packed

3 T. Milk

1/4 cup. Margarine or butter

1 1/2 cup Icing sugar.


Heat and stir brown sugar, milk and margarine in small sauce pan until boiling. Boil for two minutes. Remove from heat. Cool.

Add icing sugar. Beat until smooth. Add a bit more milk or icing sugar if needed to make proper spreading consistency. Spread over cooled squares in pan.
