This is recipe I got from my sister Penny when we were making a cookbook of family favorites.
2 medium tomatoes chopped
2 green onions sliced
1 clove of garlic minced
1 Tbsp. balsamic vinegar
1 tsp. Chopped cilantro
1 tsp finely chopped Jalapeño peppers
1/2 tsp cumin
3 cups Penne
4 boneless,skinless chicken breasts
1 Tbsp. cornstarch
2 Tbsp. olive oil
For salsa combine, tomatoes, onion, garlic, vinegar, cilantro, pepper, cumin and salt. Let sit.
Cut chicken breast into thin strips and cold with cornstarch. In skillet heat oil and stir fry chicken browning on all sides, stir in the salsa to heat through.
Cook pasta as per package directions.
This recipe makes four servings and is basically a one dish meal.
