Chicken Cacciatore


1 1/2 cups chopped onion

3 lb Chicken pieces skin removed

14 oz. canned diced tomatoes with juice

5 1/2 can tomato paste

10 oz can mushroom pieces or fresh mushrooms sliced if preferred

1 bay leaf

1 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder or 2 cloves of fresh garlic chopped

1 tsp. Oregano

1/2 tsp sweet basil

1/4 cup white ( or alcohol free) wine

1 tsp granulated sugar


Place onion and chicken in 3 1/2 quart slow cooker.

Combine next 12 ingredients in bowl. Stir. Pour over chicken, cover. Cook on low for 6 to 8 hours or on high for 3 to 4 hours. Discard bay leaf. Serves four, it is great served over pasta.
