Cheddar Cheese Beer Soup

For those of you who want to try something different.


1 lb of grated cheddar cheese

1 1/2 bottles of beer

4 cups chicken broth

1 cup grated carrot

1 cup very thinly sliced onion

1 cup very thinly sliced celery

3 cups milk

1/3 cup flour


Combine beer and broth in a large pot and bring to a boil. Add vegetables and simmer for 15 minutes. Combine half of the milk and the flour. Whisk until smooth. Add this to the pot and bring back to boil. Reduce to a rapid simmer and slowly whisk in cheddar. Add remaining milk salt and pepper to taste. Parmesan cheese and Worchester sauce may be added for extra taste.

This is a very nice tasting soup and something different.
