Orange Cake

Cake ingredients

2 1/4 cup all purpose flour

4 tsp. Baking powder

1/2 tsp. Salt

1/2 cup hard margarine or butter softened

1 1/2 cups sugar

Grated peel of 1 medium orange

2 large eggs

1/3 cup frozen concentrated orange juice thawed

1 cup milk


Stir flour, baking powder and salt in medium bowl. Cream margarine and sugar together in large bowl. Mix in orange peel. Beat in eggs, one at a time. Add concentrated orange juice. Mix. Add flour mixture in three parts alternatively with milk in two parts, beginning and ending with flour mixture. Turn into two greased 8 inch round cake pans. Bake in 350° oven for about 35 minutes until pick inserted in center comes out clean. Let stand for 10 minutes before removing to rack to cool cuts into about 16 pieces .

Chocolate Orange Icing

6 Tbsp butter or marg softened

2 1/2 cups icing sugar

1/2 cup cocoa

2 Tbsp. Frozen concentrated orange juice thawed.

Combine all 4 ingredients in medium bowl. Beat on low to moisten. Beat on high to blend well. Add more icing sugar or liquid as needed to make proper consistency. Makes 2 cups of icing.
