Summer sausage


2 lb. Lean ground beef

1 cup water

3 Tbsp Tender Quick

2 tsp. Onion powder

2 tsp liquid smoke

1/2 tsp garlic powder

1 tsp. Mustard seed


Mix ingredients all together really well. Shape into a roll and place on heavy foil, shines side down to the meat. Seal well and put in fridge for 24 hours. Poke holes with fork in bottom of roll and place on cookie sheet.

Bake 1 1/2 hours in a 325 degree oven. May be eaten hot or cold. I preferred it cold.
