Pumpkin cake

Cake ingredients:

4 eggs

1 1/2 cups sugar

1 cup oil

1-16 oz. canned pumpkin

2 cups flour

2 tsp. Baking powder

1 tsp. Baking soda

1 tsp. Salt

2 tsp. Cinnamon

1/2 tsp nutmeg

1/2 tsp cloves

1/4 tsp. Ginger

1 cup raisins (optional)

Cake instructions:

Beat egg. Add sugar, oil and pumpkin. Mix well. Mix dry ingredients together and to pumpkin mixture. Add raisins if using. Bake in 9×13 pan for 30 minutes at 350 degrees.

Icing:

4 oz. Cream cheese

1/4 cup margarine

1 tsp. Vanilla

2 cups icing sugar

Cake is moist and delicious. Even better when enjoyed on the second day.
