Grandma’s Goodies

Strawberry Cheesecake Muffins

These are so tasty and easy.

Ingredients:

1 125 g. Cream cheese

1/4 cup icing sugar, sifted

2 1/2 cups all purpose flour

1 Tbsp baking powder

1/2 tsp salt

1 1/4 cups milk

1 egg

1/2 cup brown sugar

1/3 cup melted butter or margarine

1 tsp. Grated lemon peel

1/4 tsp. Almond extract

1/4 cup strawberry jam

Instructions:

Grease muffin tins or use parchment cup cake papers. Blend cream cheese and icing sugar until smooth, set aside. Combine flour, baking powder and salt in large bowl. Mix egg, milk, brown sugar, melted butter, lemon peel and almond extract. Spoon cups half full. Top with 1 scant tbsp. Cream cheese mixture and 1 tsp jam. Spoon remaking batter on top. Bake at 375 for 20 minutes. Cool in pan 5 minutes remove and cool on racks.
