Creative recipes for breakfast treats

Muffins and scones are great ideas to start the day

These muffins are my latest creation. I hope you enjoy them.

Banana, Poppy Seed, and Orange Muffins

1 ½ c. Mashed Bananas

½ c. Oil

1 c. Sour cream

2 eggs

½ tsp. Vanilla

1 c. Sugar

1 ½ tbsp. seeds

Zest of 1 ½ oranges

Pinch of salt

½ tsp. Baking soda

1 tsp. Baking powder

2 c. Flour

Mix well and fill muffin tins. Bake at 400 F. for 20 mins.

Glaze

1 c. Icing sugar

2 tbsp. Fresh orange juice 1 tsp.

Zest of ½ orange

Cool muffins slightly and drizzle glaze over.

Breakfast Scones

2 c. Flour

1 tsp. Salt

3 tsp. Baking powder

1/4 c. Sugar

1/2 c. Shortening

3/4 c. Raisins

1 egg

1/2 c. Milk

Mix and turn out on floured board. Knead slightly. Roll out to 1/2 inch thick. Cut, brush with milk and sprinkle with cinnamon. Bake at 400 F. For 15 mins.
