Get camping with Dora’s beans and biscuits

With camping season and family gatherings upon us. here are some staple recipes to add to the meal.

This recipe is from the Maritimes and is a must at and big gathering there.

Mom’s Baked Beans

• 5 c. Jacob’s Cattle Beans

(navy beans will work)

• 1 - 1 1/2 c. molasses

• 1/2 c. sugar

• 1 1/2 tsp. Salt

• 1 tbsp. Mustard

• 1 tsp. Ginger

• A little butter

• Piece of salt pork or bacon

Cover beans with water and bring to a boil and cook until tender. Pour into a bean pot & bake for several hours. Add water if needed. Stir occasionally.

Hawaiian Cowboy Beans

• 1 (16oz) large can of beans

• 1 chopped onion

• 1 teaspoon chopped garlic

• 1 lb hamburger

• 2 cans pineapple chunks

• 1- ½ cups brown sugar

• 1-2 tablespoons mustard

• 1- ½ cup ketchup

• Splash of juice from pineapple chunks

Cook hamburger with garlic and onions.

Then add the rest of the ingredients and heat through on the stove in a large sauce pan.

You could also warm in a crock pot.

Serve with corn bread or homemade biscuits.

Biscuits & Beans

• 1 lb hamburger

• salt to taste

• 1 can pork ‘n beans

• ¾ cup your favorite

barbecue sauce

• 2 tbsp brown sugar

• 1 small onion – chopped

• 1 regular recipe baking powder

• biscuits (or if you’re in a hurry, one can refrigerate

biscuits)

• 1 cup shredded cheese

Brown beef. Add salt, beans, barbecue sauce, brown sugar and onion. Heat until bubbling. Pour into 2 qt casserole dish or 9 x 13 shallow pan. Top with biscuits. Sprinkle cheese over top. Bake at 375 F for 30 minutes.
