Here’s some help with the turkey leftovers

Drop some shrimp in with the leftover bird

This recipe is for some of the turkey leftovers that we all seem to have after Christmas.

Turkey-shrimp Oriental

2 tbsp. shortening

2 C. cooked turkey

1 - 5 oz. can shrimp

1 1/2 C. pineapple chunks

3/4 C. mushrooms

1/3 C. gr. onions (1 1/2 inch pieces)

1/3 C. celery

1/3 C. sliced gr. pepper

Sauce

3 tbsp. br. sugar

2 tbsp. corn starch

1/2 tsp. salt

1 C. pineapple juice

3 tbsp. vinegar

2 tsp. soy sauce

Saute cubed turkey & shrimp slightly.

Add remaining ingredients.

Make and add sauce. Simmer until vegs. are tender but still crisp. Serve with rice or noodles.

This recipe is for my German and Scandinavian family and friends.

Herring Salad

4 diced pickled herring

2 med. Diced, cooked potatoes

1 1/2 c. Diced beets

1/3 c. Diced dilled pickle

1/2 c. Diced unpeeled red apple

1/4 c. Minced onion

2 tbsp. Vinegar

2 tbsp. Water

2 tbsp. plus 1 tsp. sugar

1/8 tsp. pepper

1/2 c. Sour cream

Parsley

Chop vegs. etc. and toss with sour cream. Can be served right away, but is better if it sits for a couple of hours.
