What with Thanksgiving over with and Halloween coming soon here are a couple of recipes that will help with the pumpkins.
Pumpkin cake
1 wh. or spice cake mix
1 vanilla instant pudding mix
3/4 c. oil
1 c. canned pumpkin
1/2 c. water
4 eggs
1 tsp. cinnamon
Combine and beat about 2 mins. Bake in 9 X 13 inch pan AT 350 degrees F. for 40 - 50 mins.
Pumpkin cake icing
1 envelope Dream Whip
1 instant banana pudding
1 1/2 c.milk
1/2 tsp. vanilla
Combine. Beat until it stands in peaks. Spread on cooled cake.
Pumpkin pancakes
2 c. flour
4 tsp. b. powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/3 c. sugar or more to taste
1 1/2 c. cooked pumpkin
3 eggs
1 c. milk
3/4 c. vegetable oil
1 tsp. vanilla
Mix and cook as for any pancakes, but not too hot as they tend to burn easily. Serve with syrup.
