Soup and steak in Dora’s Kitchen this week

As the weather is being nasty I thought maybe these recipes may be in order.

A little comfort food.

Swiss steak

1/4 c. flour

1 tsp. salt

dash of pepper

1 1/2 lbs. round steak

3 tbsp. shortening

1 1/2 c. canned tomatoes sliced

1 c. diced celery

1/2 clove garlic

1 tbsp. Worcestershire sauce

Dredge steak with flour, salt and pepper. Tenderize steak with meat mallet.

Brown meat. Add remaining ingredients and simmer until tender.

Tomato rice soup

1 med. diced onion

8 peppercorns

2 lg. bay leaves

1 small bunch parsley

2 whole allspice

1 - 2 tsp. salt

8 c. water

1 qt. tomatoes

1/2 - 3/4 c. rice

2 tbsp. margarine

1/4 c. cream

Combine all spices in ball. Place ball in large kettle. Add water, onion and salt.

Cook 1 to 2 hrs. Add tomatoes and cook a few minutes.

Add rice and cook until tender. Add margarine and cream.
