Two soup recipes for beginning of summer

If you’ve never had Cock-a-leekie soup, here’s your chance

Now that it is a little cooler you may be looking for something a little warming. This is probably the easiest soup to make other than opening a can.

Cock - A - Leekie Soup

6 c. Chicken Broth

6 Leeks 1 c. Min. Rice

1 c. Cooked Diced Chicken

2 tbsp. Minced Parsley

Boil chicken until tender. Remove chicken from pot and dice. Split leeks and cut into 1 inch pieces. Add rice, chicken and parsley. Simmer until leeks are tender.

This recipe I got from a friend of mine. She was Polish and her husband was Ukranian, so it is a mixture of the two.

There are no quantities, but it works out great no matter what.

Borscht

Soup bone

Onion

Bay leaf

Salt and Pepper

Beets

Potatoes

Pork & Beans

Carrots

Tomatoes

Sauerkraut

Vinegar to taste

Sweet or sour cream as you prefer

Boil soup bones for a couple of hours

Add vegs. and simmer until tender.

Add vinegar.

Add cream to bowl as served.
