If you like pumpkin you will love these muffins!
1 cup canned pumpkin
1/4 tsp. Baking soda
1/2 cup shortening or margarine
1 1/4 cups sugar
2 1/4 cups flour
2 1/2 tsp. Baking powder
1/2 tsp. Salt
Stir baking soda into canned pumpkin. Cream together sugar and shortening, add eggs. Sift together dry ingredients , and add the dry ingredients alternately with the pumpkin to the shortening and sugar mix. Grease muffin tins or use liners. Fill 2/3 full and bake at 375 degree F. for approximately 20 minutes.
