2 1/4 cups coarsely shredded, peeled potatoes
1/2 cup thinly sliced green onions
1/3 cup flour
1/2 tsp. Salt
1/8 tsp. Pepper
1 egg
vegetable oil
In medium bowl stir together everything except oil, until well blended. In frying pan heat oil about (two tablespoons) until hot on medium heat. Pour batter about 1/4 cup to1/2 cup at a time and cook until browned. This makes about nine pancakes or three servings. Always doubled or tripled this recipe for our family.
