Lemon rum cake

This is a nice easy recipe using a cake mix with a few added ingredients. This cake is a taste of the Caribbean — please enjoy!

Ingredients:

Lemon cake mix (2 layer size)

4 large eggs

1/2 cup cooking oil

1/2 cup milk

Grated peel of one lemon

1/2 cup of dark rum

Glaze:

1 cup icing sugar

1 Tbsp. Lemon juice

1 1/2 tsp. Dark rum

Instructions:

Combine first six ingredients in medium bowl. Beat on low to moisten. Beat on medium for about two minutes until smooth. Turn into greased 12 cup (2.7L) Bundt pan. Bake in 350 oven for about one hour until wooden pick comes out clean. Let stand for 20 minutes. Invert onto plate or rack to cool.

Glacé: Mix icing sugar, lemon juice and rum in small bowl. Add a bit more icing sugar or lemon juice to make a barely pourable consistency. Drizzle over cake. Cuts into 16 pieces.
