This is recipe that was made every time we were out camping with a group. It is nice to cook them outside on the cook stove and visit. The smell of them cooking usually brings in visitors.

Fritter Batter

11/3 Cups all purpose flour

2 Tbsp. Sugar

2 Tsp. Baking Powder

1/4 Tsp. Salt

1 Egg

3/4 Cup Milk

In mixing bowl put flour , sugar, baking powder and salt. Beat egg until frothy add milk and add to flour mixture. The batter should be thick enough to cover fruit or vegetables, add milk if you need to thin. Drop into hot fat 375 degrees and brown each side. Drain on paper towels.

Our favourite is adding 1 1/2 cooked corn into batter and drop by tablespoon into fat.

Apple fritters are delicious and a great one to use in fall when we have so many. Peel and core the apples. Cut into rings or I just cut into chunks dust with flour and drop into oil and cook.

When I get my fitters cooking I always test the first fritter to make sure it is cooked through before starting a bigger pot full.
