Here are a couple of recipes that I make quite often and everyone seems to like them.
In this weather nobody wants to turn the stove on and heat up the house. Salads with some cold meat seem to fill the bill. Enjoy!
Creamy Vegetable Salad
1 head of cauliflower
2 c. celery
1 c. radishes
1 gr. pepper
1 c. diced mushrooms
1 c. sour cream
1 c. mayo
1 - 8 oz. pkg. creamed cheese
1 pkg. (dry) creamy Italian dressing mix
Break cauliflower into small chunks. Dice remaining veggies into bite size pieces. Mix sour cream, mayo, and creamed cheese.
Add Italian dressing mix and blend. Pour over veggies and mix well. Make the night before. Keeps well.
Fresh Spinach Salad
1 qt. chopped spinach
1/2 c. chopped celery
1 onion or 3 chopped scallions
3 chopped hard boiled eggs
3/4 c. cubed Swiss cheese
Dressing:
1/2 c. mayo
1/2 tsp.salt
1/2 tsp. Tabasco
2 tbsp. vinegar
1/2 tsp. horseradish
Chop veggies into bite size pieces. Add chopped eggs. Add cubed cheese. Mix and add dressing. Mix well and serve .
