I don’t remember where I got this recipe, but it is good when you don’t want to heat up the house too much.
Serve with potato chips or a salad. Spices and sauce can be made ahead or doubled and put into you camping supplies too.
Mexican Chicken Burger
4 chicken cutlets
1/2 TSP. chili powder
1/4 TSP. salt
1/4 TSP. ground cumin
1/8 TSP. cayenne
1 TBSP. vegetable oil
1/3 C. mayo
3/4 TSP. grated lime rind
3/4 TSP. jalapeno Tabasco sauce
1/8 TSP. pepper
4 rolls
4 leaves of lettuce
1 sliced tomato
1 sliced avacado
Pound chicken to 1/4 inch thick.
Combine chili powder, salt, cumin, & cayenne.
Sprinkle over chicken.
Cook chicken 2 mins. each side or until done.
Set aside.
Combine mayo, lime peel, Tabasco sauce and pepper.
Spread on buns.
Place chicken, lettuce, tomatoes, & avacado on and replace tops.
